Fudgy Sweet Potato Pecan Brownies

1 cup cooked sweet potato mashed
1/2 cup nut butter (I used my homemade pecan butter)
1/2 cup coconut sugar (how much sugar you use will depend on if your nut butter is sweetened and your personal preference)
1/4 cup Good Girl Chocolate cocoa powder
¼ Teaspoon salt
1 Teaspoon vanilla
Top with Good Girl bar (optional)
Preheat the oven to 350 degrees F
Boil your potato until tender and measure out 1 cup
Mash the 1 cup of sweet potato
Combine the remainder of ingredients and stir until well combined
Make sure you taste them before you bake them.
Spray a mini muffin pan with nonstick cooking spray. (this made 15 mini brownies)
Bake for about 18 minutes. Allow the brownie bites to cool in the pan before popping them out.
